Potatoes in parsley sauce with hake

Living in an island could not miss the fish! Enjoy!

  • 1kg potatoes
  • 3-4 hake fillets
  • 1 large minced onion
  • 2 boiled eggs
  • flour
  • olive oil
  • salt and pepper
  • peas (optional)


Heat up a good glug of olive oil in a big cooking pot over a medium heat and fry the minced onion. In the meantime dust the hake fillets with flour and fry them over the onion for about 1 minute on each side. Remove the fish and reserve it.

Peel and trim the potatoes and add them to the pot, swirl and fil with water until it covers everything. If you like peas and they are fresh add now to the pot. Fold in the finely chopped parsley, salt and pepper. Cook over a high heat for 20-25 minutes. Add the reserved hake and cook for 5 minutes more.

Serve with some slices of boiled egg, Enjoy!!
